Nitrogen that’s been cooled right down until it condenses, a bit like steam does if you hold a miror over a kettle while it’s boiling. It’s useful in science because of its coldness: we use it like a mega-freezer, because a normal freezer goes down to about -18 Celsius, awesome biological-specimen-keeping freezer go down to maybe -80 Celsius, but things in liquid nitrogen go down to -196 Celsius
